  1. Curried Goat


    • 2.5kg shoulder of lamb/goat
    • 20g ground cinnamon
    • 20g ground cumin
    • 3 tablespoons of
    • curry powder
    • 2 tablespoons of 5 spice
    • 5g of thyme
    • 2 sliced scotch
    • bonnet chillies
    • 2 tablespoons of ground black pepper
    • 2 sliced onions
    • 20g garlic puree
    • 20g ginger


    Season the meat with cinnamon and cumin cover half with water and cook until the meat falls off the bone

    Sweat the onion with garlic ginger black pepper scotch bonnets, thyme curry powder and all spice.

    Pour the juice from the meat into the mix and reduce.

    Add the pulled meat from the lamb to the sauce and simmer for 2 hours.

    Bang curry goat done...

  2. Jerked Chicken


    • Spring onion 50g
    • White onion 50g
    • Red onion
    • 50g Thyme sprig
    • Garlic puree tablespoon
    • Chilli paste tablespoon
    • Ginger puree tablespoon
    • Vinegar tablespoon
    • Lime two
    • whole Brown sugar
    • 2 tablespoons Salt
    • pinch of Oil 30 mls


    Roughly chop the onions and mix all together in a blender

    Add some jerk seasoning (about a tablespoon) buy from any good supermarket.

    Take ya chicken and rub the paste in vigorously

    Leave in the fridge overnight and then the next day put in the oven on medium heat covered in tin foil and cook as you would your Sunday roast.

    For the final 20 minutes uncover and whack up the heat to crisp the skin.

    Enjoy with a nice glass of rum!
